Orchard Training Cookery Club - Y10 Have a Go at Sausage Rolls
In the gap between the Christmas holiday and the New Year, four of our Year 10's came together to cook sausages. They were all going to New Year Eve parties and wanted to take something with them. Sausage rolls were agreed upon and we made three different designs.
The straight forward sausage roll always known as the "Better than Gregs" sausage roll was made with sausage meat from the supermarket. The sausage meat from the butchers was very much enjoyed but lost out only just to the supermarket variety.
The sausage plaits were made with pork shoulder from the butchers. As you can see the plaiting went ok on 3 of the 4, the last one went a little bit wrong! But that was ok, because that was the bit we tasted and I have to say all four bakers were very surprised that the mixture of finely diced pork shoulder, apricots, spring onions and herbs was a huge hit. Two of them had to confess to judging and thinking "I am not going to like that" before actually tasting it and finding it was delicious.
The Christmas Wreaths were made from a recipe idea from the Great British Bake Off website. Everyone choose there favourite pork sausages and paired it with something to replace the black pudding, which was suggested in the original recipe. The favourite replacement choice was stuffing. So, we had plain pork sausages with a fancy Christmas stuffing and an everyday sage stuffing with some very Christmasy flavoured sausages. A home made stuffing (made with horseradish) to go with some beef and port sausages as a present for a Grandad who loved those particular sausages. The final wreath was made with up market apple, sage and pork low fat sausages and a chestnut stuffing.
Once cooked, they were taken home and plated up on party salvers and taken to their respective parties. The feedback as everyone was impressed and none were left at the end of the parties. Well done girls!
