Orchard Training Homeschool Cookery Club - Rhubarb

We have had a bit of a rhubarb cooking out this week. We started with a lesson on how to harvest the stalks and how to trim the leaf off.

 

We used the BBC Good Food recipe for the Rhubarb cordial with star anise. We tried and tasted it with hot water, tap water, sparkling water, lemonade and ginger beer. The sparkling water was a hit but the lemonade and ginger beer was better.  The next time we make it, to reduce the double hit of sugar from the lemonade and ginger beer, we will make it lemon juice and ginger and dilute with sparkling water.

 

The cordial produces a left over by product of cooked rhubarb, we removed the star anis and used it in a porridge. Now to my surprise it was not the slight green tinge to the porridge but the actual texture of the porridge that put someone off. Oh well you can't win every time!

 

We made rhubarb crumbles and we topped a cake batter with rhubarb, of which I can only show you one slice as I was helping with the sterilising of the bottles for the cordial everyone snaffled their taster before I took the photo.

 

With the very last of the rhubarb pulp, we made a rhubarb Poor Knight. We sandwiched the pulp between some wholemeal bread. Soaked this in some beaten egg and pan fired it.
